this time round it was cranberry pie. its actually quite yummy! the sweetness of the pastry + the tartness of the berries. perfect combination!
anyway, i can't stand how recipes that people upload aren't very clear about the quantity. maybe its just that i'm not used to it. it was like 1 cup of flour so i happily took out the measuring cup and was wondering why is it so little! then mum told me that it should be 25og. ok good. same for the sugar. and smart smart me actually measured the flour and sugar one after the other and cos of the unequal weight distribution in the container, i think you know what happened. ><
Ingredients
- 250g all-purpose flour
- 250g sugar
- 1/4 tsp salt
- 2 cups fresh cranberries
- 2 eggs
- 1/2 stick of butter/margarine
- 1/2 tsp of vanilla essence
- 1/2 cup walnut (optional)
- In a large bowl combine flour, sugar, and salt. Add the cranberries, stir gently until coated. Half the cranberries if necessary (too big)
- In a separate bowl, beat the eggs. Combine the melted butter and vanilla extract with the eggs. Mix the wet ingredients with the dry ingredients, alternating them till doughy.
- Spread into a greased 9-inch pie plate. (used a pyrex dish)
- Bake at 180ÂșC for 40 - 50 minutes or until a wooden pick inserted in the center comes out clean. Serve warm with whipped cream or ice cream if desired.
